We all love chatpata, spicy bhaaji along with those homemade pavs, don’t we.. here is how I make mine.


Recipe for bhaaji

1 small cauliflower
1 small cup peas
2 to 3 small potatoes
1 medium capsicum
3 medium onions
4 to 5 pods garlic
Ginger half inch piece
4 green chillies
7 tomatoes blanched peeled and pureed.
Finely Onions and coriander leaves for garnish
Lemon wedges as per taste
Butter as per requirement
Salt to taste
Kasuri methi 1 to 2 tsp
3 tsp oil

Pressure Cook potato for 4 whistles and lower the heat.. let it cook for 5 to mins.

Finely chop onions.. finely cut capsicum. Wash peas.

Boil a pot of water and add tomatoes, once the skin starts separating, remove them from water and peel. Puree it.

Cut cauliflower into small wedges, check thoroughly.

Cook cauliflower in the microwave for 6 mins.

Peel potato and mash.

Make a paste of ginger, chillies and garlic.

In a thick and heavy bottom pan add oil or butter sauté the ginger garlic and chilli paste.. now add onions and sauté till it turns dark shade of pink.. add Lil salt with each new ingredient.

Now add peas and let it cook…Once done add capsicum.. sauté. ..

Now add the cooked cauliflower. . Use a masher and mash all the ingredients as you go… add potato. .Lil butter and add 2 cups water. Let it boil… Once the water dries up mash again. .. add butter, more water, 2 to 3 tsp pav bhaji masala, Lil red chilli powder, kasuri methi 1 tsp . .. mash as you go… now when the water dries up add the tomato puree. . Let it boil and simmer.. Cook for 5 to 7 mins on low. .. check for salt. . Add a pinch more of kasuri methi. . Take off heat. . Add lemon juice and garnish with finely chopped coriander leaves. And top with some butter.
Serve with finely chopped onions, lemon wedges and coriander leaves.
