I`m back with yet another Orange cake. I was getting bored and wanted to bake something in my loaf pan, which has been lying around without being used for a while. Loaf pan is perfect for me when I need to do experiments. I wanted to bake using whole wheat and orange juice. I had bought lot of oranges last week but it is starting to spoil. I got medium ones, which are really sweet and with seed. My kids didn’t like the seeds in it. So thought of using them up in  a cake.

I’m enjoying the baking process in my new electric oven. The crust is much better, the colour comes perfect and it takes lesser time to bake as well. My kids and hubby loved the cake.

  1. Whole wheat flour                                                                         1 and a half cups
  2. orange juice ( mine were very sweet)                                     a little over 1 cup
  3. brown sugar                                                                                      roughly 1/2 cup  (oranges were very sweet, hence reduced the sweetness)
  4. baking powder                                                                                 1/4th tsp
  5. baking soda                                                                                        1 tsp
  6. apple cider vinegar                                                                          1tsp
  7. vanilla essence                                                                                   1tsp
  8. oil                                                                                                             1/2 cup
  9. salt                                                                                                          a pinch

  • Pre heat the oven at 190 degrees.
  • Prepare the pan by brushing oil or butter and dusting some flour. Remove the extra flour by tapping it over a sink.
  • Take a bowl add all the wet ingredients, mix.
  • Take another bowl sieve all the dry ingredients.
  • Now, slowly add all the dry ingredients to the wet ingredients and combine it. Do not over mix. Just combine everything without lump and pour into the prepared pan. I used a loaf tin.
  • Bake it in the preheated oven for 25 to 30 mins. Mine was done in 25 mins.
  • Check at 25 mins by inserting a toothpick. If the toothpick comes out clean the cake is done. If it is sticky then bake for another 5 to 7 mins.
  • Once the cake comes out clean, take it out from the oven and let it cool for 15 to 20 mins.
  • Take out the cake from the pan after 20 mins and cool it on a cooling rack.
  • Let the cake cool completely before slicing.
  • Enjoy the soft, moist and light cake.
