Who doesn’t like potato??? Potato is always a backup option for me. If there is nothing else in the fridge or I feel too lazy, I experiment with potatoes. This is one of them..

Ingredients

Potato                                                                                                     3 large

Salt                                                                                                         to taste

Cumin powder (jeera)                                                                                 2 tsp

Asofoetida                                                                                                3/4 tsp

Chilli powder                                                                                             1/4 tsp (I use it just for the color)

Ajwain (carom seeds)                                                                                3/4 tsp

Oil                                                                                                           3 tbsp

Lemon juice                                                                                                     1 tsp

Corriander leaves                                                                                   for garnishing

Method

Peel the potatoes and cut them into small square pieces, set aside in a bowl of water. Take a pan add oil, Jeera and ajwain (you can add one bayleaf as well, its optional). Once they crackle, add asofoetida, after a second add the potatoes, salt, jeera powder, chilli powder.

Let the potato fry in high flame for around 2-3 minutes. Mix the curry, now simmer and let the potato cook. Occasionally, turn the gas on high and let it roast and then back to low flame. Alternately, if you are in a hurry, you can also cook potatoes in the microwave for around 7-8 minutes and then add them in the oil, it will speed up the cooking, but it will make the potatoes soggy.

Let the potato roast in low flame for a good 20-30 minutes, and if you want it to become crisp, keep a little longer. Once done, turn off the gas and add lemon juice.

You can also garnish the curry with 5-6 pods of finely chopped garlic and a 1/2 inch piece of finely chopped ginger slightly fried in 1 tsp oil. It gives nice flavor to the curry. Garnish with finely chopped corriander leaves.
